The majority of Galaxy Note 7 units in the United States and South Korea have now been swapped out, though a significant number remain in the wild, says Samsung. A global recall of the smartphone was announced weeks ago, though it took a little while for replacement units to arrive.

When Samsung last provided an update on the matter, it said ~50% of units had been replaced in the US. That update was five days ago, suggesting there has been a slow down since then and it could take a little while for all potentially dangerous units to be taken back.

At least in Korea, Samsung is attempting to increase exchanges by offering retail stores a financial incentive. They can receive $18 per phone replaced and they'll receive another $18 if they exchange over 80% of the phones that were sold.
